Nut Crunch Chicken (with Honey Mustard Sauce)  (Serves 2)

  • 2 chicken breast halves (boneless)
  • 2 tbsp butter, melted
  • 1 tbsp dijon mustard (or slightly less, to taste)
  • 1/3 cup chopped peanuts (approximately)


  • 1/2 cup plain yogurt
  • 2 tbsp mayonnaise (light is fine)
  • 2 tbsp dijon mustard (or slightly less, to taste)
  • 1 tbsp honey

  • Preheat the oven to 375 degrees F (190 degrees C)
  • Mix melted butter and mustard in one bowl
  • Put nuts into another bowl
  • Dip the chicken pieces into butter/mustard mixture, then into the nuts
  • Place the chicken onto/into a foil lined baking dish and cook for 35-45 minutes

  • To make the sauce:  Just whisk together all the ingredients
    (during the last 5 minutes of the chicken cooking)

  • We like to serve this with (Uncle Ben's) long grain and wild rice (which also takes about 35 minutes to cook) and corn.


  • I originally got this recipe from TV Guide, who got it from the 'Days of Our Lives' Celebrity Cookbook (but we both made a few changes to it along the way).

  • We haven't tried this yet, but I imagine it would be similarly good using pork chops, just like 'Shake and Bake' is.

  • The sauce would be good to make on its own (or if you had any left over) for dipping chicken nuggets and/or veggies
