Sweet and Sour Meatballs                (Serves 2)

      They actually look like this!

  • 20 meatballs, approximately

You can get the Costco kind, which is what the original recipe called for.  I used the ones from Safeway (Swedish) that come in a 1 kg package.  I used a third of them (there were 78, so I used 26).  Obviously you can just double or triple the recipe, and if you're using them as appetizers - also what the original recipe was for - then you can about double the number of people that any given number will serve.

  • 1/3 cup grape jelly (see note under chili sauce)
  • 2/3 cup (Heinz) chili sauce

The original recipe, which was for 60 meatballs, called for one 250 mL jar of jelly and a 455 mL jar of chili sauce.  I just approximated a third of that and kept the proportions about 1:2.

  • First prepare the meatballs according to the directions on the package (for mine, it was 2 minutes on a paper towel in the microwave at HIGH, then rearrange and microwave for another 2 1/2 minutes, also on HIGH).
  • While that's happening, prepare the sauce.  In a saucepan, heat the jelly and chili sauce together until the jelly is melted and the sauce is bubbling.
  • Add the meatballs to the sauce, stir to coat, turn down the heat and simmer for about half an hour, stirring occasionally.
  • We like this with Uncle Ben's Long Grain and Wild Rice, which happens to take about 35 minutes to cook, so it all works out nicely.  We didn't serve any veggies with it - besides think of all the tomatoes and stuff in the chili sauce (shades of Ronald Reagan!).
